Quick Mackerel and Broccoli Pasta with Paprika and Chilli 

A quick and scrumptious dish with a creamy and spicy sauce. 
Serves 4 
300g penne pasta 
1 pack of tenderstem broccoli, chopped into 1" pieces 
1 tinned mackerel in a spicy and tomato sauce 
2 tablespoons light cream cheese 
2 teaspoons paprika powder 
1 teaspoon chilli powder 
1 knob of butter (optional) 
2 tablespoons olive oil 
ground sea salt to taste 
2 tablespoons finely chopped fresh coriander to garnish 
Preparation method 
1.Boil the pasta as per instructions on the packet, reserving 2-3 tablespoons of the pasta water before draining the cooked pasta. 
2.Meanwhile, add the butter and half the oil to a hot wok. Add the washed and cut broccoli and stir fry for 3-4 minutes. 
3.Add the mackerel, paprika powder, chilli powder and salt. Break up the mackerel while stirring. 
4.Once this has become hot, add the cream cheese and mix well. 
5.Drain the pasta, remembering to keep some of the water, and add both to the mackerel and broccoli sauce. Stir through gently until the pasta is coated with the creamy sauce. 
6.Place on a serving dish, and garnish with the fresh coriander leaves.

Paprika Powder
Paprika Powder - is a spice made from ground, dried fruits of Capsicum. The seasoning is used in many cuisines to add colour and flavour.
Sea Salt
Sea Salt - is salt produced from the evaporation of seawater. It is used in cooking and cosmetics.
